Kurozu Moromi is a type of Japanese fermented black vinegar. Kurozu, or black vinegar, is a product traditionally made in Japan, specifically in the Kagoshima prefecture.

It's known for its rich flavor and various health benefits. The production process involves fermenting rice, often unpolished rice, in large earthenware pots for a year or more. The resulting liquid is Kurozu, while the leftover fermented rice residue is known as Moromi.

Moromi is an important part of the fermentation process in many traditional Japanese foods, including soy sauce and miso. In the case of Kurozu, Moromi refers to the fermented mixture of rice and microorganisms that forms during the vinegar-making process. This mixture contains a concentration of beneficial compounds, including amino acids and other nutrients.
